The new ‘Great Living’ menu has arrived for patients at Penn State Hershey Medical Center, where food service providers are changing foods to focus on heart-healthy options. Mashed potatoes are being swapped for mashed cauliflower, whole-wheat hamburger buns are now on burgers instead of white buns. Heart-healthy options like quinoa, couscous, and bulgur wheat are being used in dishes instead of white rice.

The center wants to keep menu options familiar and offer healthier substitutes that are minimal fat, sugar, and sodium, with no trans fat. For instance, chocolate cupcakes are now being made with black beans and tuna salads are being nixed on the mayo.

The Medical Center offers suggestions through greatist.com for anyone to try a few healthier recipes. They also suggest the following substitutes when cooking:

  • Black beans for Flour
  • Unsweetened applesauce for sugar
  • Avocado puree for butter
  • Vanilla for sugar
  • Mashed bananas for fats
  • Greek yogurt for sour cream or mayo
