Food Trucks Cook Up Healthy Foods For Schools

Serving up healthy options like local turkey hot dogs, and farm fresh beet hummus, food trucks are now becoming the trend for healthy foods on school campuses across the states.

Boulder Valley School District in Colo. was one of the first districts in the U.S. to serve school lunches through a food truck with a $75,000 grant from Whole Food Market.

Students are taking advantage of the fun and fresh options to eat on campus in a new way. The director of food services at the district, Bertrand Weber stated in an article that the demand for the food trucks is so high, that the districts are challenged to keep up with it.

Minneapolis School district is now planning to do the same this spring to help keep high school students on campus for lunch, and offer up healthy fresh options in a fun atmosphere.The district in Minn. has also decorated the bus to promote fresh produce with a “True Food” campaign theme.

The food trucks have been popular in the past in Minneapolis areas where healthy foods were hard to find, and the truck provided summer meals to disadvantaged students. Back in 2013, food trucks and buses were used across the country by the U.S Department of Agriculture, to feed hungry children in the summertime.

Both schools in Boulder Valley and Minneapolis are also taking advantage of the buses for school fundraising opportunities, providing catering services for local events, school kickoffs, parties and graduations.

Giving students more healthy options and easy access to fresh foods in a fun and creative way within schools may help ensure students make healthier choices when it comes to what they eat.
